Imaginary journey to the heart of Sicily, among the hills of San Cipirello in the province of Palermo. This is the vineyard from which Tenute Jato obtains the grapes used to produce this Sant'Anselmo, Terre Siciliane IGT Perricone. A structured red from pure Perricone grapes, this wine well represents the new Sicilian viticulture, made of quality, modernity and tradition. Starting with the grape variety, Perricone, one of Sicily's oldest and most fascinating varieties, known for its ability to produce intense and complex wines. The grapes used for this Sant'Anselmo come from selected vineyards located in a privileged area, where the combination of soils and good exposure help develop the distinctive organoleptic characteristics of this wine. In the cellar, after destemming, the must, together with skins and grape seeds, is sent to maceration and fermentation at a controlled temperature. This allows the best possible extraction of all aromatic compounds and tannins. Malolactic fermentation follows, which softens the acidity and makes it more rounded. The wine then continues its maturation in steel, in contact with its fine lees, until the end of November. Finally, it is transferred to barriques for a further three months of ageing, which gives the finished wine elegance and aromatic depth. Intense ruby red in colour, it offers a complex and fascinating bouquet on the nose, with hints of ripe red fruits such as cherries and plums, enriched by spicy notes of black pepper, as well as a slight hint of aromatic herbs. In the mouth, it is structured and well-balanced, with good acidity balancing the richness of the tannins, which are persistent and harmonious. As far as food pairings are concerned, this Perricone is perfect with robust and flavoursome traditional Sicilian dishes, such as lamb, grilled sausages and mature caciocavallo cheese.
