Afterwards comes soft pressing and malolactic fermentation. The wine continues in steel, on fine lees, until the end of November. Afterwards, the wine is transferred to barriques for ageing for 3 months.

    "Sant'Anselmo" Nero d'Avola Sicilia DOC 2023
  • Among the hills of San Cipirello, in the province of Palermo, comes Sant'Anselmo, Nero d'Avola Sicilia DOC. This fine wine is the fruit of an area rich in history and winemaking tradition. After all, Sicily, a land of ancient civilisations and millenary culture, offers a unique climate and soil. Perfect for the cultivation of vines. The hot summer days, mitigated by sea breezes, and the predominantly calcareous soils create an ideal environment for producing reds and whites of great character and personality. Nero d'Avola, a true pride of Sicilian viticulture, is known for its ability to adapt to different microclimates, resulting in wines of remarkable structure and complexity. The grapes selected for Sant'Anselmo come from vineyards located in a privileged area, where the combination of altitude, exposure and soil composition contribute to enhancing its organoleptic characteristics. After destemming, the must, together with skins and grape seeds, is sent to maceration and fermentation under strict thermodynamic control. This phase is crucial to best extract the aromatic and polyphenolic compounds from the skins. Subsequently, the wine undergoes soft pressing and malolactic fermentation, which softens its acidity, making it more rounded and harmonious. The wine then remains in steel, in contact with the fine lees, until the end of November. Final ageing then takes place in barriques, for about three months. In the glass, Sant'Anselmo has an impenetrable dark red colour, indicative of its concentration and depth. On the nose, the bouquet is intense and rich, dominated by hints of ripe fruit, such as cherry and plum, enriched by spicy notes of black pepper and vanilla, with pleasant balsamic nuances that complete the aromatic profile. In the mouth it is round and well-balanced, with a present but harmonious tannicity. Good persistence and a pleasant sensation of softness. Sant'Anselmo goes well with robust and tasty traditional Sicilian dishes, such as lamb, lasagne and pasta alla Norma. It is also excellent with mature cheeses and cured meats.
