The vinification of Disueri begins with the destemming and cold maceration of the skins. This is followed by fermentation at a controlled temperature, with frequent pumping over and punching down, to extract colour and aromas from the skins. At the end, malolactic fermentation takes place in steel, and the wine then remains in contact with the fine lees for at least 5 months. The ageing process ends in the bottle. Disueri di Cusumano Nero d'Avola, Sicilia DOC, has a dark ruby red colour in the glass. The nose opens with fruity aromas of cherry, blackberry and violet. In the mouth, it is dry and balanced, with a pleasant sensation of warmth and a good aromatic persistence. The vineyards from which Disueri is made are located at about 400 metres above sea level, in a hilly area characterised by clayey soils that give the wine structure, minerality and a good ageing potential. Over time, its aromas evolve and are enriched with spicy and tertiary notes. Disueri is a versatile wine, perfect to accompany red and grilled meats. It also goes well with pasta dishes with meat sauce and aged cheeses.
