The Faro DOC is a relatively young controlled designation of origin, established in 2014, that protects the production of high-quality red wines from a unique territory such as the slopes of the Etna volcano. The indigenous grape varieties Nerello Mascalese and Nerello Cappuccio are the protagonists of this designation, to which small percentages of other black grape varieties, such as Nocera and Nero d'Avola, can be added. A fine example is this Rosso proposed by Le Casematte. A small volcanic masterpiece. Intense and structured, it is made from Nerello Mascalese (55%), Nerello Cappuccio (25%), Nocera (1%) and Nero d'Avola (1%) grapes grown in the company's vineyards on the slopes of the volcano. A unique terroir, characterised by mineral-rich soils and a cool, breezy climate. Extreme conditions that give the grapes a strong and decisive character, with intense aromas and a distinct minerality. The grapes are harvested manually in boxes and are immediately transported to the winery. Here fermentation begins in truncated conical steel vats with frequent punching-down (5 times a day) for a month. This is followed by pressing of the skins and then the wine is left on the lees until January of the following year. At this point, the blending of the different masses takes place and the final stage of maturation in small to medium-sized French oak begins, which continues for about 9 months. Finally, after bottling, the wine matures for a further 6 months before being put on the market. Intense ruby colour with garnet reflections. The nose reveals a broad and complex bouquet, characterised by intense aromas of ripe red berries, such as blackberry, cherry and plum. Then floral notes of violet and rose, spicy hints of black pepper, nutmeg and liquorice. In the mouth the wine is warm, enveloping and structured, with well-integrated tannins and a pleasant freshness that gives balance and persistence.
The Le Casematte winery owes its name to the presence of three casemates, small forts used as sentry shelters, dating back to the First and Second World Wars, set up to defend the territory. These are located in the largest vineyard plot. The company has a strong territorial identity, being located in the hills north of the city of Messina. Today it has a vineyard of about 11 hectares, cultivated with the main Sicilian varieties such as Nerello Mascalese, Nerello Cappuccio, Nocera and Nero d'Avola.
