Etna, Europe's highest active volcano, represents a truly unique terroir. The volcanic soils, rich in minerals and nutrients, give the Syrah grapes unmistakable characteristics. Originally from the Rhone Valley in France, this grape variety has found an ideal terrain on Etna to express itself at its best. The grapes are harvested by hand in boxes, to preserve their integrity, and are immediately transported to the winery. Here the grapes are destemmed and macerated in contact with the skins in stainless steel at a controlled temperature for about 20-25 days. This is followed by malolactic fermentation in 225-litre French oak barrels, which gives the wine greater complexity and harmony. In the glass, this Sicilian red has a beautiful intense ruby colour with violet reflections. The nose offers a broad and complex bouquet, characterised by notes of ripe fruit such as blackberry, plum and blueberry, enriched by spicy hints of black pepper, liquorice and chocolate. A hint of vanilla and toast, the result of ageing in wood, completes the olfactory profile. In the mouth the wine is warm, enveloping and structured, with well-integrated noble tannins and a good freshness that gives balance and persistence. The finish is long, with pleasant mineral notes that recall the volcanic nature of the area. Sole di Sesta is a versatile wine that can accompany different types of dishes. Perfect with savoury red meats such as lamb, Florentine steak or braised meats. Its complexity and fine structure also make it ideal as a meditation wine, to be sipped slowly in combination with a good book or in the company of friends.
