Among the wines of Azienda Agricola San Salvatore 1988, this Falanghina is one of the most appreciated by critics and consumers. And it is not hard to believe. It comes from a manual harvest of pure Falanghina grapes. Carefully selected, they are quickly brought to the winery to be processed within a few hours of harvesting. Crushed and destemmed, they are quickly cooled and brought to about 4 degrees centigrade for a cryomaceration phase that continues for no less than 6 hours. This is followed by the fermentation phase, carried out in steel vats at a very low temperature, and then by a refining phase of at least 6 months in contact with its fine lees. Young and brilliant straw yellow in colour, this Falanghina is striking for its decidedly citrus bouquet, with notes of green apple, banana, pineapple and Mediterranean scrub. In the mouth it starts with a nice fresh taste. Elegant, persuasive and playful, this Falanghina has a decidedly satisfying finish.
