A great little jewel of our southern Italy, the Fiano grape probably originated in Campania but has also adapted well to other environments, including Puglia. Appreciated for its ability to produce high quality white wines, it has ancient origins. It is believed to have been cultivated in Italy for centuries, with historical documents attesting to its presence as far back as the 13th century. Giustini offers it here in a 'pure' version. Illuminato Fiano, Salento IGP, the name refers to the rays of sunlight that caress the grapes in every season, accompanying them to full ripeness. Only then are they harvested and processed with love and skill. We are in the first ten days of September. The grapes are brought to the winery and destemmed and softly pressed. Then, without any maceration, the must is sent to alcoholic fermentation in temperature-controlled stainless steel tanks. At the end, a period of ageing in stainless steel completes the production process. In the glass, it has a beautiful, bright straw yellow colour. On the nose, notes of fresh fruit and flowers invite one to taste. In the mouth, then, an extremely pleasant and perfectly balanced wine is revealed in all its components. Recommended with hors d'oeuvres and raw seafood, but also with delicately flavoured fish dishes.
