The name Calpazio refers to the mountain in the heart of the Cilento region, which offers protection to the winery's vineyards. Paestum IGP organic, this white wine comes from a careful vinification of pure Greco grapes. Harvested and selected by hand, the vinification is simple but careful. It starts with a soft pressing and a fermentation in steel tanks, and then completes the process with a further period of refinement, again in steel tanks for about 8 months. The result is a wine characterised by a beautiful straw yellow colour. The nose recalls complex and heterogeneous scents of yellow peach, apricot, grapefruit and quince, with a hint of ginger, white flowers and delicate oriental spices. In the mouth it is dry and vertical. Decidedly fresh, thanks to a natural acidity, but also pleasantly savoury and with a delicately soft finish. Long and pleasant, it invites one sip after another. This is a wine whose body and structure require a pairing that is not overly delicate. If you wish, you can also dare to marry it with roast veal with potatoes.
