      Bianco Salento IGP 2023
    • This fresh Salento IGP comes from a successful selection of white grapes typical of Salento, including Verdeca, Fiano and Malvasia Bianca. All grapes come from vineyards located on the hills of Salento, where the warm, temperate climate and lime-clay soils favour a balanced ripening rich in aromas. Winemaking here follows a modern process that begins with the destemming of the grapes. The grapes are then left to macerate for a few hours. A soft pressing follows, with subsequent cold static decantation to obtain a clear must. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks and the wine then matures in steel for a few months before being bottled. On the nose, it has an intense, floral bouquet, characterised by notes of jasmine flowers and wild roses, with hints of tropical fruit such as pineapple and banana. In the mouth, however, despite its apparent simplicity, this wine is pleasantly elegant, fresh and delicate, with a discreet acidity that makes it particularly drinkable. The minerality of the soil is well perceived, giving the wine an interesting complexity. The finish is persistent, with fruity and floral notes.

      In the heart of Salento, the land of great wines, and more precisely in the locality of San Marzano is the Notte Rossa winery. Here the vineyards are those of Primitivo di Manduria from which wines of great personality are obtained. The company vineyards are located in the most vocated areas of the Salento peninsula. Hectares of vineyards, mainly with indigenous grapes, arranged in different plots enjoying different exposures and soils. The white grapes come from the hilly, clayey areas in the north of Taranto, i.e. in the upper Salento, at about 150 metres above sea level. For the reds, such as Primitivo and Negroamaro, the choice falls on plots in the agri located further south, areas of red earth, limestone and sand, where the old sapling plants have coexisted for decades with Mediterranean shrubs.
