    "Kalkberg" Pinot Bianco Alto Adige DOC 2021
  • Alto Adige DOC Kalkberg from Kellerei St. Pauls is a pure Pinot Bianco. This fascinating wine originates at the foot of Monte Macaion, where the Dolomites meet the valley, creating a spectacular landscape and unique terroir. The vines rooted in the limestone and draining soils are also nourished by the minerals of the dolomite, which give the wine complexity and depth. For its part, Pinot Blanc is a grape variety that thrives in this environment. The vines of Kellerei St. Pauls, in particular, are between 32 and 52 years old and are situated at an altitude of between 460 and 580 metres, where they benefit from optimal exposure and a good temperature range between day and night. All this favours a slow and complete ripening of the grapes. In the cellar, a slow, temperature-controlled fermentation takes place in steel tanks and large oak casks. This process allows the aromas and flavours of the grapes to be preserved and developed to the fullest. Ageing on fine lees for 12 months then gives the wine a beautiful structure, enriching it with aromatic complexity and a strong, persistent mineral finish. Kalkberg offers a rich and varied aromatic bouquet, with notes of yellow apple, pear, white peach and fresh mountain herbs. In the mouth, it reveals itself to be complex and structured, with a velvety, enveloping texture. The finish is long and mineral, persistent and unforgettable. An extremely versatile wine, it is perfect as an aperitif and pairs beautifully with hors d'oeuvres and tartare, seafood and even white meats.

In total, the vineyards belonging to St. Pauls comprise about 185 hectares, spread over the most suitable areas of the valley surrounding the village of St. Pauls/Appiano. Over one and a half million bottles are produced each year, which reach the markets of the world from South Tyrol, to the delight of many wine lovers. The production consists mainly of white, dry and aromatic wines.
