    "Sanctissimus" Pinot Bianco Riserva Alto Adige DOC 2019
  • Sanctissimus from Kellerei St. Pauls is a Pinot Bianco Riserva, the epitome of purity and elegance, from the historic vineyards of South Tyrol. Sanctissimus, in fact, originates from vines on an extremely steep, south-facing slope near the historic church of Missiano. This hill, with an altitude between 350 and 400 metres above sea level, is characterised by limestone soil of glacial origin. This, together with the optimal exposure, creates a unique microclimate that favours a slow and perfect ripening of the grapes. The vines were planted at the end of the 19th century and are now among the oldest in South Tyrol. A wine heritage of inestimable value. The yield is extremely low. The grapes are harvested by hand with the utmost care, guaranteeing a fine concentration of aromas. After manual and painstaking harvesting, the grapes are gently macerated and fermented on the skins in large earthenware amphorae. This ancient method allows a slow and natural extraction of the aromas and tannins, giving the wine a complex structure. Following fermentation, the wine then matures for a long time, again on the fine lees, further enriching its body and character. Brilliant straw yellow colour. On the nose, the wine reveals exceptional olfactory complexity, with notes of ripe apple, spicy scents and hints of sage. In the mouth, it is voluminous and juicy, with a creamy texture and a good balance between acidity, fruit and minerality.

Founded in 1907, it currently unites around 200 members who work their vineyards with passion, often by hand, and deliver their best grapes to the cellar. In total, the vineyards belonging to St. Pauls comprise about 185 hectares, spread over the most suitable areas of the valley surrounding the village of St. Pauls/Appiano. Over one and a half million bottles are produced each year, which reach the markets of the world from South Tyrol, to the delight of many wine lovers. The production is mainly of white, dry and aromatic wines.
