Intense nascetta with sweaty spice, coconut, dried grass and flowers. Some dried peach and apricot on the medium palate add a little sweetness, before it returns to the more savory elements on the finish, leaving an aftertaste of smoky bacon. A bit wild, but hard not to like. Drink now. Screw cap.
This interesting white wine comes from a pure processing of Nascetta grapes. This is a rare and typical vine from Novello, in the province of Cuneo. Very popular at the end of the 1800s, it was then abandoned for a long time and rediscovered only about 10 years ago. Today a total of about 10 hectares are planted with this variety. The Ellena vineyard from which the grapes used to produce this wine come is called Paradiso. It is a beautiful plot planted in 2007, with a correct western exposure. Here the grapes reach full ripeness in the first half of September. After harvesting, the grapes are left in cold maceration for 80 to 100 hours, and immediately afterwards they are pressed and sent to the fermentation tank, also in steel. At the end of this process, the wine matures on its lees for about 6 to 9 months, thus acquiring greater complexity and pleasantness. Fresh and fruity, this Piedmontese white wine is ideal as an aperitif, but can also accompany vegetarian dishes or the classic cheese omelette.

Founded by Francesco and Giovanni Ellena, the current farm derives from an original property purchased in 1966, after having worked for years as sharecroppers on various farms in La Morra. For many years the farm was part of an agricultural cooperative, but the dream of returning to making wine from their own grapes never faded in the family members. So, with the 2009 harvest, after having renovated part of the historic farmhouse and the 19th century cellar for the ageing of the Baroli, the Ellena family returned to winemaking on their own. Today three generations work side by side, interweaving ancient traditions and innovation.
