Gavi DOCG is one of Piedmont's many excellent wines. The hill of Gavi, in the province of Alessandria, is an enchanting place, with its great fortress and vineyards framed by woods and hills. Here Marchesi di Barolo produces this interesting white wine. The grapes come from vineyards planted on medium-sloping hills, on soils rich in precious minerals that give the wine considerable structure. Cortese in purity, the grapes are quickly brought to the cellar and delicately pressed to extract only the noblest and most aromatic fractions. The must obtained is then fermented at a low temperature in temperature-controlled steel tanks. The wine is then racked into steel or vitrified cement tanks, remaining in contact with the yeasts for a long time. This makes the wine long-lived, capable of evolving for a long time. Its colour is pale straw yellow with greenish reflections. The bouquet is intense and fine. Fruity and floral, and reminiscent of Golden apples and green almonds. Clear then is the hint of chamomile. In the mouth, it is particularly elegant, harmonious and persistent. Savoury, as is typical for the type, with balanced mineral notes. It is the classic wine for hors d'oeuvres, seafood and fish. Thanks to its structure and fine minerality, however, it is also an ideal companion for rice salads, vegetable pies and light first courses. It goes well with fresh soft cheeses.
