The winery is named after Frédéric Prain's inspirational muse, his wife. He, an eclectic Parisian engineer, has created a beautiful winery in the heart of AOC Chablis. We are in the northern part of Burgundy, in Milly, where the cool climate and limestone-marl soil create an ideal habitat for growing Chardonnay. The grapes, harvested by hand when fully ripe, are vinified in an artisanal manner, with pneumatic pressing and fermentation in temperature-controlled, lined cement vats. This is followed by malolactic fermentation and ageing on the fine lees for 10 months, which gives the wine aromatic complexity. In the glass it has a beautiful bright straw yellow colour. The nose offers a bouquet of floral and fruity aromas, with notes of white flowers, citrus fruits and flint. In the mouth, it is fresh and mineral, with pleasant acidity and a lingering finish. A versatile wine, it pairs perfectly with a variety of dishes. Ideal with fish dishes, shellfish, fresh cheeses and light first courses.
