  • Fiordiligi is a fine Sicilian white wine, proposed by Assuli and already awarded by Italian and international wine critics. A 100% Grillo from the Mazara del Vallo area, this wine is made from grapes that have reached perfect ripeness thanks to the area's mild climate, with mild winters and warm but breezy summers. Harvesting, however, begins in the first weeks of September, by which time the intense heat of the Sicilian summer is a distant memory. Soft vinification in temperature-controlled stainless steel tanks, after racking the Fiordiligi matures for about 5 months 'sur lies', i.e. in contact with its fine lees. This process, typical of the most important wines from Burgundy, gives the Sicilian Grillo an extra touch of elegance and complexity. Straw yellow with evident greenish reflections, the nose of this white wine reveals a strong citrus and fruity character that touches on the sweetness typical of tropical fruit. The same picture emerges on the palate, where it is a fresh wine with a perfect harmony of saltiness and minerality. Excellent as an aperitif, it is perfect with fish-based first courses.
