Carinda is made from pure Insolia, or Inzolia, grapes. DOC Sicily, it is a pleasantly rich white wine. The grapes, which have reached full ripeness, are harvested at the beginning of September. They therefore have plenty of time to enrich themselves with aromas and perfumes, and that pleasant warmth that brings to mind the warm Sicilian springs, for those fortunate enough to have experienced them in person. Vinification begins with very soft pressing, followed by static clarification of the musts, which are then sent to temperature-controlled fermentation in steel containers. This is followed by ageing in steel tanks for about 5 months 'sur lies' and then in the bottle for at least another 2 to 3 months. Straw yellow with evident greenish reflections, the nose is characterised by very fine notes of citrus fruits and orange blossom. In the mouth it is fresh, savoury, with a nice hint of minerality that makes it even more elegant. An excellent wine to pair with fish dishes, it is a perfect match for seafood hors d'oeuvres, shellfish and fried foods.
