  • Sensations It has a straw yellow colour, a fine and velvety perlage; the bouquet is intensely fruity with evident notes of ripe Golden apples and pears with a finish reminiscent of jasmine flowers. The taste is savoury with a well balanced soft note.
  • Vinification After careful selection, the grapes were introduced whole into the pneumatic press. After an initial decanting, the must obtained from the soft pressing is placed in temperature-controlled tanks where it remains until it is used for the production of sparkling wine. The must, with the addition of selected lees, is placed in temperature-controlled containers where fermentation takes place at a controlled temperature of 15°-16°C. Once the desired alcoholic volume and sugar content has been reached, refrigeration stops fermentation and, after a brief period of rest, the sparkling wine is ready for bottling.

  • Asolo Prosecco DOCG Brut Biodiversity by Villa Sandi is made from 100% Glera grapes from the area of Crocetta del Montello, in the province of Treviso. Harvested by hand and vinified in the autoclave using the Martinotti method, they produce a wine of great pleasure and elegance. In the glass it reveals a beautiful straw yellow colour with a perlage that, despite the method, is fine and persistent. The nose is rich and immediately reveals hints of white flowers, citrus and apple. The mouthfeel is dry, rightly dosed, and with good structure. The finish is pleasant and well balanced.
