In the cellar, alcoholic fermentation takes place in steel vats for 3 months, followed by a second fermentation in autoclaves according to the Martinotti or Charmat method with a frothing process that lasts 25 to 30 days.

  • Valdobbiadene Prosecco Superiore DOCG Brut Strada di Guia 109 by Foss Marai. The name recalls its origin, Strada di Guia 109, where the vineyards climb the slopes, caressed by the sun and kissed by the wind. In this handkerchief of Treviso land, the Glera vine finds its ideal habitat. The hills, composed of layers of sandstone and marl, give the grapes minerality, aromas and flavour. The cool and ventilated climate, with significant temperature excursions, favours a slow and gradual ripening, preserving the freshness and elegance of the aromas. The grapes, hand-picked at the perfect moment of ripeness, are vinified with meticulous care. Alcoholic fermentation takes place in steel at a controlled temperature, to enhance the primary aromas of the vine. The wine then re-ferments in autoclaves for 25-30 days, acquiring its fine and persistent effervescence. The straw yellow colour with greenish highlights anticipates a rich and fragrant nose, where notes of green apple, acacia flowers and citrus fruits intertwine with hints of bread crust and yeast. In the mouth, the wine explodes in a swirl of vivacity, with a fine, persistent bubble that caresses the tongue. The crisp freshness is perfectly balanced with the softness of the fruit, making for a satisfying and inviting sip. Try it with fish, shellfish and seafood dishes. Excellent as an aperitif.
