With the Primitivo, Negroamaro is almost synonymous with Apulia. An indigenous variety of the region, in fact, this grape is used in purity to create various typical wines. It is the most widespread variety in the provinces of Lecce and Brindisi, but it is also easy to find in other areas, used to produce red and rosé wines with an unmistakable character. Santoro Negroamaro, Puglia IGP, is Terre di Sava's interpretation of this interesting variety. A pleasant and immediate wine, it is the result of a careful processing of the grapes which have reached full maturity in the cellar. It starts with a thermo-controlled maceration phase and alcoholic fermentation grafted by selected yeasts. The whole process lasts about ten days, at the end of which, after racking, the wine is put into steel tanks for the subsequent ageing phase that precedes bottling. In the glass it has a beautiful red-purple colour, with black-purple reflections. The nose reveals an intense and persistent perfume. Pleasantly fruity, with hints of blackcurrants and berries. In the mouth, however, you discover a wine characterized by a good body. Velvety and harmonious, it has a long and savoury finish. Traditionally, Negroamaro is served with the classic meatballs with sauce, but also with a good legume soup or the famous roulades of offal cooked on the grill.
