Imported from nearby Dalmatia, Susumaniello is one of the most important indigenous grape varieties in the Brindisi area. Some believe that its name derives from the fact that, when young, the Susumaniello plant was particularly productive. It ended up being overloaded with bunches of grapes, like a 'somarello'. The Pàstini propose it here in purity in this pleasant VersoSud. The name, in this case, derives from the position of the vineyards, located in the southernmost part of the Valle d'Itria, right into the province of Brindisi. In the glass, VersoSud reveals an intense ruby red colour with pleasant violet reflections. Its bouquet is ample and seductive, in the mouth it reveals a sweetly fruity soul which clearly recalls the sensations of blackberry and cherry, made more elegant by pleasant toasted nuances. Soft but persistent, it is a pleasantly harmonious wine. An extremely versatile red, it adapts well to a thousand different situations. From the aperitif to the table, it is easy to put it at ease. Especially if the menu includes meat dishes of all kinds, from classic beef to veal to rabbit. Try it with the classic aubergine parmigiana.
Pastinum', in Latin, was the hoe. And, by direct derivation, it also indicated the land destined for vines. Pàstino, on the other hand, is an ancient and difficult art that involves planting traditional vines in stone. Today, finally, the "i Pàstini" winery, in the heart of the Itria Valley, the land of trulli, represents the last line of defence of the ancient local traditions, fortunately combined with the most modern winemaking techniques. The result is a line of wines that represents the best of Apulian oenology. To do this, the company can count on grapes from the estate's vineyards, which lie in the heart of one of the most interesting areas of the region, between the towns of Locorotondo and Martina Franca. About 12 hectares in total, managed with passion by the Carparelli family. Among the vines grown are Verdeca, Bianco d'Alessano and Minutolo. White grape varieties that confirm the ancient viticultural vocation of our long "heel".
