The grapes, Corvina Veronese in clear majority, then Corvinone and Rondinella, as well as a small part of Cabernet, come strictly from vineyards located in the historic area of the appellation. This is why Reius, Amarone della Valpolicella DOCG, can boast the term "Classico". The grapes, carefully selected in the vineyard and harvested in small crates, are left to dry for about 3 or 4 months in dry, well-ventilated rooms. Only when they reach the ideal degree of drying are they pressed and left to ferment in steel tanks. The process of slow transformation continues for about 30 days, until the right alcohol content is reached. At that point, the wine is first placed in cement tanks for a few months, then it is transferred to medium and large oak barrels, where it waits for about 3 years to reach the right level of maturity. A wine of intense red colour with garnet hues, the nose reveals an ethereal and enveloping bouquet, with spicy, dried fruit and currant notes. In the mouth, on the other hand, it shows a full and velvety flavour, with considerable structure. An important and intense wine, it requires the right combination to be fully appreciated. Excellent with important dishes based on game, but also spicy and well-aged cheeses.
