  • Sensations The palate has a great structure, is warm, broad, complex, elegant and velvety. Fine and round, with soft tannins and long persistence, it offers unexpected hints of jammy fruit and wild herbs. 18 - 20°C
  • Vinification It is a wine of great personality, obtained from the grapes of the Valpolicella Classica area by selecting only the 'recie', i.e. the wings of the bunch, the sweetest and most spargola part. Vinification takes place in two stages from the end of January, after the grapes have dried in traditional drying lofts. It is left to rest in the bottle for a few months to reach the peak of its qualities while still young. Natural over-ripening of the grapes for about 100+30 days in the fruttaio, with temperature, humidity and weight loss constantly monitored. Crushing and destemming of the grapes at the end of December, spontaneous cold maceration for about ten days, inoculation of the yeasts and slow fermentation with continuous pumping over. After about 30 days, a part is drawn off and on this must/wine the remaining, almost dry grapes are pressed to add the natural sweetness and multiply the aromas

  • Perhaps not everyone knows that, in Valpolicella, the most important and prized wine was once not Amarone but Recioto. In fact, to be precise, Amarone did not even exist. It was born much later, it is said by a lucky coincidence. The fact is that Recioto della Valpolicella DOCG is still one of the most interesting sweet wines in Italy. And San Dionigi is the Monte Cillario winery's interpretation of this prized Veronese style. As always, it is made from a blend of grapes indigenous to the region, with 55% Corvina, 25% Corvinone and 15% Rondinella, plus another 5% of other varieties. The grapes, selected and harvested by hand, are left for over a month in special rooms, the fruttai, where they slowly wither, concentrating the aromatic substances, before being sent for processing. At the end of this phase, the wine is vinified and matured in wood. The result is an elegant nectar of intense red colour with brilliant reflections. The nose reveals its sweet fruity soul, with pleasantly vinous notes and clear hints of cherries and currants. In the mouth, it surprises with its perfect balance of freshness and sweetness, with all the scents perceived on the nose in fine evidence. It is with a glass of this Recioto della Valpolicella DOCG that all Sunday lunches should end. Perfect with small dry pastries, it goes well with red fruit tarts. Also excellent in combination with tasty cheeses or on its own, to meditate on the beauty of this ancient Veronese tradition.

    It is the first winery on the Valpolicella Road. We are in Parona, on the outskirts of Verona. We are talking about the Azienda Agricola Monte Cillario, founded in 2009, after having conferred its grapes to the Cantina Sociale di San Pietro in Cariano for 50 years. An expression of a history, made up of families and generations, that intertwine and unite to create wines of immediate pleasantness, with intense and varietal aromas that evolve with ageing. It covers a total surface area of 30 hectares, 90% of which are planted with vines and 10% with olive groves. All production processes take place in the winery, from the receipt of the grapes to the ageing and bottling of the wines. The company's range includes all the wines of the region, from the vintage Valpolicella to the prized Amarone della Valpolicella Riserva.
