  • Vinification Once the Amarone fermentation is complete, the cuts of wine suitable for Valpolicella are re-fermented according to the traditional 'ripasso' technique on the Amarone marc, at a temperature of 17-18°C. This allows a re-fermentation that lasts 7-8 days, a period that will give the wine more richness in colour, extracts and aromas. After an initial refinement in steel, it is matured in tonneaux for 12-18 months, and 2 months in the bottle.

  • The Valpolicella Ripasso Superiore DOC Excellentia, offered here by Azienda Agricola Monte Cillario, represents the right compromise between the freshness and immediacy of vintage Valpolicella and the depth of the winery's best Amarone. A perfect wine for convivial gatherings, claim the winery. And it certainly is. The grapes are grown partly with the typical Veronese pergola and partly with the more modern guyot. Corvina, Corvinone, Rondinella and Croatina, harvested perfectly healthy, by hand. In the cellar we start with a maceration phase of about 3-5 days, at low temperature, followed by the fermentation phase and the classic ripasso. Ageing is in second passage tonneaux, where the wine rests for 12-18 months. Then, after bottling, the wine rests for about another 2 months in the bottle. To the eye, the wine has a beautiful intense red colour with violet reflections. The nose is pleasantly fruity, with hints of cherry and toasty notes. In the mouth, however, one discovers a wine characterised by a full and balanced flavour. Enveloping, with soft tannins and the typical morello cherry aftertaste. Excellent with main courses of meat and game, perfect with hard cheeses.

    It is the first winery on the Valpolicella Road. We are in Parona, on the outskirts of Verona. We are talking about the Azienda Agricola Monte Cillario, founded in 2009, after having conferred its grapes to the Cantina Sociale di San Pietro in Cariano for 50 years. An expression of a history, made up of families and generations, that intertwine and unite to create wines of immediate pleasantness, with intense and varietal aromas that evolve with ageing. It covers a total surface area of 30 hectares, 90% of which are planted with vines and 10% with olive groves. All production processes take place in the winery, from the receipt of the grapes to the ageing and bottling of the wines. The company's range includes all the wines of the region, from the vintage Valpolicella to the prized Amarone della Valpolicella Riserva.
