Barbaresco DOCG Gaiun from the Marchesi di Grésy winery is a wine that represents Piedmontese excellence, the result of skilful grape selection, careful vinification and patient ageing. The Gaiun vineyard enjoys a privileged position with a southern exposure and vines ranging from 230 to 290 metres above sea level. A perfect mix that gives the Nebbiolo grapes a unique character, minerality and complexity to the finished wine. Harvesting is done manually, destemming and gently crushing the bunches to best preserve the aromas. Traditional vinification, alcoholic fermentation in steel at a controlled temperature. Maceration is carried out in two stages: eight to ten days with emerged cap and twenty to thirty days with submerged cap. Malolactic fermentation occurs spontaneously, giving the wine softness and harmony. This is followed by twenty-eight months of ageing in French oak barriques and a rest in the bottle before release. In the glass, one is captivated by its intense and brilliant garnet red colour. On the nose, a complex and elegant olfactory picture: notes of plum, dried flowers, bark, rhubarb, liquorice and mineral tones. In the mouth, the wine conquers with its structure, harmony and freshness. The well-integrated tannins provide elegance and longevity, while the fruity persistence gives a long and satisfying finish. Barbaresco DOCG Gaiun is a meditation wine, but it can also be paired with game dishes, red meats and hard mature cheeses. An unusual but intriguing pairing is with dark chocolate, which enhances the aromatic notes of the wine and creates an irresistible contrast of flavours.
