People contribute to the care and maintenance of the vineyards, which are passionately managed as if they were private gardens. Nature, through a unique microclimate, encourages the appearance each year of the so-called noble rot, or Botrytis cinerea, a key ingredient in the production of the noblest of sweet wines in France, and perhaps the world. This Symphonie De Haut-Peyraguey, in particular, comes from a blend of 95% Semillion grapes and Sauvignon Blanc for the remainder. The grapes, manually selected according to the degree of ripeness and mold attack, are carefully vinified, and the resulting wine is aged in oak barrels. Golden yellow, intense and lively, the nose reveals an enchanting aromatic appeal, with a wide range of scents from cedar wood to spices, from old roses to passion fruit. In the mouth, however, it is super concentrated without being overpowering. Sweet but not too sweet, it is the perfect wine to end (on a high note) a lunch or dinner. Serve with a bowl of fresh fruit or a simple and tasty dessert.
