IGT Lazio Rosso, Campo Vecchio is one of the good labels offered by the Castel de Paolis winery in Grottaferrata. This is one of the Lazio winery's historic wines, produced since 1993. It is an interesting blend of Shiraz, or Syrah, and Cesanese grapes in equal parts. An international grape variety, therefore, and an indigenous Latium grape that together find an absolutely interesting balance. Hilly vineyards at 250 metres above sea level, the soils are of volcanic origin and the plants have an average age of just under 30 years. Vinification in stainless steel at a controlled temperature, at the end of the process the wine is divided into two parts. One half takes the barrique route, the other remains in steel vats until final blending and bottling. A ruby red of beautiful intensity, the nose reveals clear scents of red fruit, blackberries and raspberries, followed by a sweet and spicy background. In the mouth, however, the most interesting feature is undoubtedly the good balance of all its components, with sweet tannins and good minerality. On the table it accompanies meat-based first and second courses, grilled meats and medium-aged cheeses.
The Castelli Romani, and in particular the Grottaferrata area, with its 270 metres above sea level, the right distance from the coast of the Tyrrhenian Sea and the volcanic soil, combined with a climate that is one of the mildest and most pleasant in Italy, constitute ideal conditions for the production of quality wines. The members of the Santarelli family are certain of this. From the early seventies, out of pure passion and love for the land, they began to purchase small plots of land, almost entirely planted with vines. Until the mid-1980s, however, the grapes produced were delivered to the local wine cellars. Then, in 1985, thanks to the meeting between Giulio Santarelli and Professor Attilio Scienza, the decision was taken to set up a new winery called Castel De Paolis, to produce great wines from the area. The name derives from an ancient castle dating back to the Middle Ages, which in turn stands on ruins dating back to Roman times. To this day, the winery's cellar makes use of the precious 'Cisterna Romana', in which the barriques with the great red wines for ageing are stored.
