'Na Vota, Ruchè di Castagnole Monferrato proposed here by Cantine Sant'Agata, is a particularly important wine for the Piedmontese company. It is, in fact, Cantine Sant'Agata's first experience of a zonal wine-making process. It is in fact produced by blending four vineyards with different characteristics, precisely to offer continuity of taste and smell. 100% Ruchè grapes, after harvesting the grapes undergo destemming and soft crushing, with a low sulphur dioxide content. Fermentation in contact with the skins for 14/16 days, with daily punching-down, and malolactic fermentation in stainless steel tanks. 'Na Vota presents great harmony and balance. Warm and intriguing, its bouquet opens to hints of violets and roses, hay and vanilla. A full-bodied red, it enjoys a long aromatic persistence. Good today, it does not fear being forgotten in the cellar for a few years. Its fine spiciness makes it suitable for pairing with richly aromatic cuisine. Perfect with game dishes such as venison, wild boar and hare. For those who enjoy sipping it away from meals, it can also be served with a simple pastry dessert.
Cantine Sant'Agata was born in the golden years of industrialisation, when young couples left the countryside for a secure income near the big cities. Which, fortunately, the parents of Franco Cavallero, the current owner of the company, did not do. Remaining in the small village of Scurzolengo, in the province of Asti, they continued to cultivate vines and then sell their wine. In the early 1990s, Franco and his brother Claudio became owners of the family farm, adopting the current name of Cantine Sant'Agata. The name refers to a votive pillar placed by a wealthy family in honour of Sant'Agata right in front of the winery. Today, the success of Sant'Agata wines in the world is linked above all to Ruchè, first planted by Franco's father years before anyone in the world asked for it.
