Pro Nobis is a Ruchè di Castagnole Monferrato. Produced by Sant'Agata from a selection of grapes harvested in the oldest and best exposed vineyard, where natural selection has improved production. But that is not enough. Careful sorting of the grapes is also carried out, to ensure that only the best bunches are processed to obtain this prized crù. After fermentation, the wine remains in contact with the skins for a long time, loading itself with tannins and olfactory substances, and is then bottled after a minimum of one year's ageing in large wooden barrels. The result is a wine of great character, persistent 'beyond any possible written or told description', as stated on the producer's website. A wine characterised by a pleasant spiciness, it goes well with aromatic cuisine. Excellent in combination with game or with meat braised in the same wine.
