    • Vinification The grapes are gently pressed and cooled to 8/10°C. This allows maceration time to be extended to around 24 hours, limiting the extraction of tannins. Drawing off takes place when the must has reached its optimum tonality and characteristics. Fermentation temperature 15/16°C. At the end of alcoholic fermentation, the wine matures sur lies for about 3 months.

      "Rohesia" Negroamaro Rosato Puglia IGP 2023
    • Technically, they are called 'one-night wines', because the maceration of the skins required to colour the must lasts no longer than a few hours. And they can be recognised precisely by the beautiful shade of pink, typical for the region. Rohesia, an inviting rosé from Negramaro grapes offered here by Cantele, has all the characteristics to belong to this category. Cherry pink, the nose reveals an intense and persistent perfume, with hints of red berry fruit, strawberry, peach and cherry. But also floral, of rose and violet. The most attentive, however, will not miss the slight hint of flint that comes to make the whole decidedly more complex. Round, elegant and haughty. In the mouth, it reveals itself to be a powerful wine, but with great freshness and flavour. Technically it is an IGT Salento. 100% Negroamaro grapes from the municipality of Guagnano, in the province of Lecce. Harvested in the second half of September, after vinification the wine matures on its lees for about 3 months, acquiring a pleasant complexity that in no way detracts from its freshness. From aperitif to table, this rosé impresses with its versatility. Excellent with delicate and refined raw fish dishes, for lovers of simplicity it can also be served with a simple caprese, with tomato and mozzarella.

We are talking about Cantele, one of Puglia's best-loved and most appreciated wineries, by enthusiasts and professionals alike, in every corner of the world. A story in reverse since its beginnings when, in 1950, Giovanni Battista Cantele, from Pramaggiore in the Veneto region, and his wife Teresa Manara, from Imola in Romagna, decided to move from northern Italy to Puglia, in the province of Lecce. The founder of the family, it must be said, was already involved in the bulk wine market. The second path backwards is linked to the birth of the company. We are in 1979 and, in this case, the decision is to start with the marketing of bottled wines only, and then, over time, move up through all the stages of the production chain. The first harvest, in fact, dates back to 1992 and in 1999 the winery was created. Since then, the Cantele family's activities have continued unabated, until 2002, when the new winery was created in Guagnano, in the heart of the Salice Salentino DOC area. Today, the company is well established in the main foreign markets as well as at home, and in particular is among the most appreciated wineries in its region.
