Passo Sacro is a delicate Cerasuolo d'Abruzzo DOC signed by Torre Zambra. A rosé that expresses the best of Abruzzo's winemaking tradition, this wine is born in Villamagna, in the province of Chieti, on hills between the Adriatic Sea and the Majella mountain range, two natural elements that combine to create strong temperature swings between day and night, ideal for obtaining fresh wines rich in aromas. Cerasuolo d'Abruzzo DOC is not a simple rosé, but a nationally and internationally recognised expression of excellence. It is distinguished by its cherry colour and typical aromas and flavours that are directly reminiscent of Montepulciano, the native vine from which it originates. Passo Sacro is made from 100% Montepulciano grapes harvested at the end of September. The skins remain in contact with the must for about 60 hours, until the characteristic intense cherry colour is obtained. Ageing takes place on fine lees in stainless steel vats for 2 months, followed by a further 2 months in the bottle to ensure greater harmony and freshness to the final product. Passo Sacro has a brilliant colour. On the nose, it reveals a rich and immediate bouquet, dominated by notes of fresh cherries that also return with great consistency on the palate. The taste is characterised by a pleasant freshness, perfectly balanced by the taste-olfactory correspondence, which keeps the cherry as the absolute protagonist right through to the finish. This rosé stands out for its balance, being fresh and lively but at the same time soft and enveloping.
Torre Zambra represents an authentic excellence of Abruzzo oenology. Its history is linked to that of the De Cerchio family who began cultivating their first plot of land in Villamagna in 1910. The official foundation, however, dates back to 1961, by Laurentino De Cerchio. The choice of Villamagna as the beating heart of wine production is no coincidence. This little jewel of Abruzzo's hinterland is blessed with a unique microclimate due to its proximity to both the Adriatic coast and the Majella mountain range, which creates significant temperature excursions between day and night. The vineyards of Torre Zambra are located between 120 and 200 metres above sea level, with limestone-clay soils rich in humus, optimal conditions for the cultivation of native grape varieties such as Pecorino, Passerina and Trebbiano. However, it is Montepulciano that is the real protagonist of its production. The production philosophy of the De Cerchio family is distinguished by its deep respect for the environment. All the vineyards are cultivated according to organic farming principles, an approach that favours respect for natural times and non-invasive techniques. A distinctive element of the winery is the choice of spontaneous fermentation, a process that uses the indigenous yeasts naturally present on the grapes to create wines that fully reflect the characteristics of the terroir. This method, combined with careful agronomic practices, gives complex and aromatic wines, authentic emotions in the bottle.
