    • An evocative and amusing name. We are talking about Sheep, Terre del Volturno IGP. 100% Coda di Pecora, an indigenous Campania grape variety that is certainly not among the best known in Italy. It is proposed by Azienda Agricola Il Verro, a certified organic winery, well established in the heart of Campania. But let us proceed with order. We are in the hills overlooking the Volturno river, in the Formicola area, in the province of Caserta. Here the climate is temperate and the soil rich in minerals. Coda di Pecora, a grape variety of ancient origins, is characterised by its ability to adapt to the particular conditions of the Campania region, producing fresh, fruity wines characterised by a natural elegance. Its curious name derives from the shape of the cluster, which resembles a sheep's tail. The grapes are harvested by hand in the first half of September, when they reach the right degree of ripeness. Vinified in white, fermentation takes place in temperature-controlled stainless steel tanks. The result? A dry wine, but with a good balance between warmth and freshness, making it extremely pleasant and versatile. Luminous straw yellow, Sheep's nose reveals hints of fresh fruit, such as apple and pear, which intertwine with floral aromas of broom and a refreshing hint of mint. In the mouth, it is characterised by its dry taste, with good sapidity and discreet freshness. A pleasantly balanced white, characterised by a long persistence and a clean, fresh finish. Designed to be consumed young, Sheep goes well with fish and shellfish dishes such as prawns, squid and clams. Also try it with batter-fried vegetables, buffalo mozzarella from Campania and spaghetti with clams.

      The Il Verro winery, located in the heart of the Caserta hills, was founded by Cesare Avenia in 2003. We are located between Monte Maggiore and the Volturno river. This area, much loved by the Bourbon royal family, is famous for wild boar hunting and offers ideal conditions for viticulture thanks to its privileged position and continental climate. The winery takes its name from the ‘boar’ (the male of the wild boar) and produces high quality artisanal and organic wines from indigenous grape varieties typical of the region, including Casavecchia, Pallagrello Bianco and Nero and Coda di Pecora. Rediscovered after years of oblivion, these interesting autochthonous varieties are at the heart of the production. The excellently exposed vineyards are surrounded by rich Mediterranean scrub vegetation, consisting of centuries-old olive, walnut and cherry trees, which help create a perfect environment for the vines to grow.
