Coccio, Marche Bianco IGT proposed here by Filodivino is a Verdicchio that surprises. A land of rolling hills and medieval villages, Le Marche conceals an oenological treasure that deserves to be discovered. The protagonist is Verdicchio, but not just any Verdicchio. Coccio, in fact, is a bold and innovative interpretation of this grape variety, an explosion of aromas and flavours that will surprise you. But let us proceed with order. It is born in San Marcello, on clay-limestone soils that give the wine an intense minerality. Coccio is the fruit of a rigorous selection of grapes from vineyards over 55 years old. Vinification takes place in amphora, an ancient method revisited in a modern key that enhances the characteristics of Verdicchio. Maceration on the skins lasts a good 20 days and gives the wine an important structure and unusual aromatic complexity for a white wine. Subsequent ageing, again in amphora, for 12 months, then amplifies its minerality and taste persistence. In the glass it has an intense, almost coppery amber colour that anticipates a rich and complex aromatic profile. Notes of citrus peel, camphor, mimosa and incense emerge on the nose, a floral and spicy bouquet that blends harmoniously with more evolved hints of beeswax and honey. In the mouth, it is full, warm, with a delicate tannicity that envelops the palate. The minerality, typical of the terroir, gives the wine a surprising freshness and drinkability. A meditation wine, perfect for those who love structured and complex wines, it actually proves to be a wine suitable for various occasions. It goes well with structured fish dishes, such as brodetto or stoccafisso all'anconetana, but also expresses its best when paired with white meats and mature cheeses. Thanks to its structure and great capacity to age, it can give great satisfaction even after a few years of refinement in the bottle.
Born from the passion of a textile entrepreneur for the land and the desire to live in harmony with nature, Filodivino is now a wine tourism gem in the Marche region. The winery is located in the heart of San Marcello, where an old ruined farmhouse has been regenerated, surrounded by 17 hectares of vineyards. Here, gentle slopes and clay soils provide an ideal terroir for growing vines. At Filodivino, in particular, Verdicchio and Lacrima di Morro d'Alba, both indigenous varieties, find the perfect environment to best express their characteristics. The vines, some of which are ‘50 years old’, are cultivated using organic methods, respecting the rhythms of nature and preserving biodiversity. Under the ground, in a cellar dug into the rock, the must ferments and the wine matures, protected by constant temperatures and natural humidity.
