These are the three fundamental characteristics of this Falerio Pecorino DOC, proposed by Cantina dei Colli Ripani, one of the most interesting production realities of the region. More than 300 wine-growing members who make wines from the territory, starting with typical grape varieties, as in this case. Pecorino in purity, the grapes are organic and come from the municipality of Ripatransone and neighbouring municipalities. After a careful harvest, the bunches are taken to the cellar to undergo a phase of cryo-maceration. This is followed by soft pressing, with débourbage of the must, and fermentation at a controlled temperature. At the end, the wine is left to mature in steel tanks, in the absence of oxygen, in contact with its fine lees so that it acquires greater aromatic complexity. The result is a beautiful wine characterised by a straw-yellow colour with greenish reflections. The nose is intense, persistent and fine, with hints of fresh fruit, flowers and citrus fruits. In the mouth, then, one discovers a wine characterised by a pleasantly fruity, savoury, slightly acidulous and long lasting taste. Ideal with baked fish, it is a fresh and light white wine that can also be served as a simple snack with a board of fresh salami and soft cheeses
