    • Poggio dei Gelsi is Falesco's historic label. Born in 1989, it represents the history and origins of the Cotarella family's company, as well as being an important reference point for its territory. But let us proceed with order. It is a typical Est! Est!!! Est!!! Classico di Montefiascone DOP, produced from a blend of Rossetto, Trebbiano and Malvasia grapes. All grapes come from vineyards located around Lake Bolsena, where the best bunches are selected. Every stage of processing is followed with almost maniacal care, starting with dry pruning and ending with summer thinning. The aim is to reduce the yield per plant, obtaining grapes characterised by great qualitative-quantitative balance. Harvesting takes place from the last week of September. Although the grapes are vinified separately. The Rossetto, in particular, undergoes cryomaceration. A very soft pressing is then carried out and the must obtained is fermented in temperature-controlled stainless steel tanks.
