  • Sensations Brilliant straw yellow colour. The nose welcomes us with hints of white flowers accompanied by light citrus notes. The palate is full, fresh and vibrant while showing good structure and complexity. A Brut with a fine and persistent perlage and a distinct minerality.
  • Vinification Destemming and soft pressing followed by cold maceration for about 24 hours. Fermentation for 25% in small French oak barrels, where the wine remains for a further 8 months on its lees during which it undergoes malolactic fermentation in some barriques. For the remainder in steel at a controlled temperature of 17 °C. Maturation of 40 months on the lees. Followed by 12 months of ageing in the bottle.

  • Etna DOC, Metodo Classico Brut, Millesimato. This is what Cottanera proposes. A sparkling wine of great elegance and complexity, produced from 100% Nerello Mascalese grapes grown in Castiglione di Sicilia, on the slopes of the Etna volcano. This unique area is characterised by mineral-rich soils and a cool, breezy climate. These extreme conditions give the Nerello Mascalese grapes a strong and decisive character, with intense aromas and a distinct minerality. After the harvest, the best bunches are brought to the cellar for processing. This starts with destemming and a soft pressing. Cold maceration then takes place for about 24 hours, followed by fermentation, 25% of which takes place in small French oak barrels, where the wine then remains for a further 8 months in contact with its own yeasts. At this stage, malolactic fermentation also takes place in some barrels. The remainder of the mass ferments instead in steel at a controlled temperature. After bottling, a 40-month maturation on the lees follows, followed by a further 12 months of bottle ageing. Brilliant straw yellow in colour, the nose welcomes us with hints of white flowers accompanied by light citrus notes. In the mouth it is full, fresh and vibrant while showing good structure and complexity. A Brut with a fine and persistent perlage and a distinct minerality. Perfect as an aperitif, it pairs well with fish first courses, white meat main courses and even red meat dishes. Its freshness and minerality make it ideal as an all meal wine.
