The Lacrima grape variety, whose origin is ancient and shrouded in mystery, takes its name from its berries which, when ripe, tend to 'weep' drops of must. It is an indigenous grape variety of the Marche and is distinguished by its great aromaticity. It produces very fragrant wines with clear floral and fruity notes. Its cultivation is mainly concentrated around the municipality of Morro d'Alba. The climate and terroir of this area give the wine unique characteristics. A fine example is this Lacrima di Morro d'Alba DOC Chapter 4, proposed here by the Cooperativa Cantina dei Colli Ripani, a genuine and refined expression of the vine, a small oenological jewel. Vinification begins with a cold pre-fermentative maceration of the grapes that allows the extraction of delicate aromas and flavours. The process then continues with the fermentation phase and the wine stays on the fine lees for at least three months, giving it greater structure and complexity. Visually, Capitolo 4 is striking with its intense ruby red colour, enriched by violet reflections. On the nose, it expresses all its fragrance and intensity, with predominant floral hints of rose and violet, as well as fruity notes. In the mouth, the finish is fruity, fresh and slightly tannic. A complete and enveloping taste experience. Served at a temperature of 16/18°, it accompanies cured meats and red or white meats.
