There is a bit of Italy in this Champagne Blanc de Blancs, 100% Chardonnay, from Maison Cheurlin-Dangin. And we are not just referring to the name, Cuvée Florence. But let's proceed in order. A pure Chardonnay, as is de rigueur for a Champagne Blanc de Blancs (white wine from white grapes), this Florence is made from grapes from the Aube region, in the southernmost part of the Champagne region. Here, the soils and climate are ideal for growing high quality grapes, rich in freshness. After harvesting, which is strictly by hand, the grapes are delivered to the cellar for immediate processing. Produced according to the traditional Champagne method, the bases undergo a 10-month passage in oak barrels, followed by a further 5 months in Italian earthenware amphorae. This is followed immediately by bottling and the slow phase of maturation in contact with the yeasts in the bottle. In the goblet, it has an enchanting light yellow colour with greenish highlights. Numerous chains of fine bubbles rise unceasingly to the surface of the glass, bringing with them fragrant notes of fresh fruit, yellow lemons, pineapple, citron and rennet apple. In the mouth, it is pleasantly thirst-quenching. The fresh acidity is in perfect balance with the sweetness due to the dosage and richness of the fruit.
