    • Saint-Émilion is a charming medieval town in the Libourne region of France, and home to some of the most interesting red wines in the Bordeaux region. The appellation Grand Cru is awarded only to the best wines, shown in the famous 1855 classification. Merlot is the predominant grape variety on this river bank, accompanied by Cabernet-Franc and Cabernet-Sauvignon. A fine example of this is this Château Fombrauge, Saint-Émilion Gran Cru Classé, which is made precisely from 90% Merlot and 10% Cabernet Franc. Hand-picked grapes selected for health and proper ripeness are delivered to the winery in small crates. They then undergo careful sorting on a sorting table, before and after destemming. About 20 qualified people participate in this operation. The transformation process varies according to variety, and the wine is assembled only a few months before the beginning of the wood maturation phase. In this case, the winemaker's planned aging is about 16 months, in new oak barrels for 40 percent and second-passage barrels for the remainder. In the glass, it is a beautiful deep, dark ruby red color. The nose reveals seductive notes of fruit and flowers, with distinct flavors of black cherry, blackberry and elderflower. In the mouth it is intense and fruity. Soft and persistent, this is a wine that requires rich pairing. Excellent with game, loves all red meat dishes.
