For those approaching the world of French wines, there are names, appellations, that absolutely must be remembered. Among these is undoubtedly Pouilly Fuissé AOC, located in Burgundy on the outskirts of the Mâcon area. Some of the best white wines in the world are produced here, based strictly on Chardonnay. Mythical wines that also often have excellent aging potential. Traditional vinification, the fermentation phase takes place in temperature-controlled steel. The difference here, however, is undoubtedly the long aging process that lasts over a year and involves the use of oak barrels. Here the wine rests in contact with its noble lees and undergoes regular bâtonnage to gain depth and complexity. The result is a beautiful white characterized by a gold color. The nose is extremely elegant, with mineral notes reminiscent of flint and citrus like lemon and grapefruit. In the mouth, it is fine and pleasantly complex, with notes of nuts and toastiness. A decidedly rich wine, it requires a weighty pairing. Great idea to pair it, for example, with a flavorful fish soup.
