Châteaux de Fleys offers this typical Chablis, the result of a pure vinification of Chardonnay grapes. The production area is Côte Neuve and Vaux-Noyers, we are in northern Burgundy, a few kilometers from the Champagne border. The vineyards here are located at an elevation of about 280 meters above sea level and enjoy a westward exposure. The vineyard, about 2 hectares in total, has an average age around 30 years. After the harvest, the grapes arrive at the winery to be quickly processed. Fermentation takes place in steel tanks, and at the end of processing, the wine also undergoes malolactic fermentation. This is followed by a further period of aging in on its own lees, in steel tanks, for about a year. Straw yellow color with greenish reflections, the nose has typical floral hints of white flowers and fruity hints of apple, pear and peach. There is no lack of pleasant mineral notes, also typical in this case. On the palate it is fresh, with fruity, citrus and fruit flavors of apple, pear and peach, as well as floral and herbaceous notes reminiscent of jasmine and hay. On the finish, excellent savoriness and, again, pleasant and typical mineral notes.
