Lazio, with its rolling hills and rich wine-making history, is a land of interesting native vines that tell ancient stories. One of these is the Bellone, the protagonist of Cantine Cincinnato's Castore. It is born in Cori, about 50 km south of Rome, an ancient village that rises on hills. Here, from south-facing and well-ventilated vineyards, at an altitude of between 100 and 250 metres above sea level, Cincinnato grows his Bellone. The soil is volcanic and clayey and gives the wines a very special minerality. The Castore, Lazio IGT wine harvest begins between the 10th and 20th of September, when the grapes reach optimal ripeness. The vinification is accurate and aimed at preserving the freshness and fragrance of the fruit. The wine is fermented and aged in stainless steel to maintain the liveliness and aromatic integrity of the original fruit. Castore has a brilliant straw yellow colour. The bouquet is delicately fruity, with notes of yellow peach and hawthorn. On the palate it is harmonious, fragrant and fresh, with a pleasant minerality and a lingering finish that invites you to take another sip. A wine for immediate drinking, designed to be consumed young, it goes well with delicate first courses, fresh vegetables and fish-based dishes.
