  • Sensations Conte della Vipera 2018 is a beautiful straw yellow colour with greenish reflections. The nose is characterized by citrus notes of grapefruit in harmony with hints of herbs and elderflowers. On the palate, the fruity aromas and delicate mineral sensations come together in harmony. Decisive and persistent in the aftertaste.
  • Vinification The time of harvest for Sauvignon Blanc and Sèmillon was chosen by seeking a balance between sugar concentration and maximum expression of the grapes’ varietal aromas. The bunches, picked by hand, were immediately transferred to the cellar and cooled by passing through a refrigerated conveyor which preserved the characteristic varietal aromas by lowering the temperature before pressing. After soft pressing, the musts were kept at a temperature of 10 degrees C for a few hours to allow them to clarify naturally. They were transferred to stainless steel tanks, where alcoholic fermentation took place at a temperature of max 16 ?C. Once this operation was completed, the wine was kept at a temperature of about 10 ?C to prevent the malolactic fermentation from taking place and to preserve the organoleptic characteristics unaltered. The two varieties were then combined so that one could complete the other. Fresh, vertical, slightly aromatic Sauvignon, soft and tropical Sèmillon.

    Conte della Vipera is a blend of Sauvignon Blanc and Sémillon, and what I like most about this vintage is that you can make out the distinct characteristics of each. The Sauvignon Blanc chimes in loudest with floral fragrances and jasmine, and the Sémillon pops in with honey and dry grass or hay. This cool vintage sports a dot of green lime or tropical fruit as well.

  • Castello dell' Sala is the Umbrian estate of the Antinori family. It rises a few kilometres from Orvieto and covers about 500 hectares. Conte dell' Vipera is one of the most interesting wines produced in these lands. An international blend of Sauvignon Blanc and Semillon that come from vineyards located in the hills up to 350 metres above sea level. Aged in steel, it is a wine capable of giving great satisfaction, despite its simplicity. In the glass it is a pale straw yellow colour, with light greenish reflections. The nose has fruity notes ranging from citrus to exotic fruit. While in the mouth it offers a pleasant and direct taste, marked by a good freshness.
