    "Kaseler Nies'chen" Riesling Spätlese Ruwer 2021
  • Located in the heart of Germany, the Ruwer region is an area distinguished by its unique geological and climatic characteristics. Here, vineyards extend over gentle hills along the Mosel River, where sandy soils with mixtures of clay and marl create an ideal habitat for growing Riesling. The Riesling Spätlese Ruwer Kaseler Nies'chen offered here by Bischöfliche Weingüter embodies the best characteristics of this noble grape variety. The vines, some of which are decades old, benefit from the special microclimate of the Ruwer valley, where warm days and cool nights allow the grapes to ripen slowly and gradually, which is essential for developing complexity and aromatic depth. Harvesting is selective, carried out manually to ensure that only the best grapes reach the cellar. Processing is gentle, preserving the integrity of the grapes and their aromas. Fermentation takes place in stainless steel tanks located along the river, where the temperature is constantly monitored to achieve the best balance between sweetness and acidity. The wine rests on fine lees until July/August of the year following the harvest, a period that allows it to develop further complexity and structure. Finally, after a rigorous sensory check by the cellarman, the wine is bottled using natural corks, thus guaranteeing perfect conservation and maturation in the bottle. Bright straw yellow in colour, the nose reveals fruity aromas of cassis, apricot and peach, accompanied by a slightly glazed touch that adds a note of elegance. On the palate, however, the wine is fresh and smooth, with a distinct minerality that reflects Ruwer's unique terroir. Its vibrant acidity balances the residual sweetness, making it a harmonious and persistent wine. Its freshness and complexity make it perfect with mature cheeses, where the sweetness of the wine balances the intense flavour of the cheese. It is also excellent with oriental dishes.

Formed from the union of three historic estates in 1966, Bischöfliches Konvikt, Bischöfliches Priesterseminar and Hohe Domkirche, the winery is today an icon of Moselle wines, renowned for their elegance, freshness and minerality. The vineyards of Bischöfliche Weingüter Trier are mainly cultivated with Riesling, the main grape variety of the Mosel, which best expresses its characteristics of elegance and minerality here. Alongside Riesling, we also find Pinot Gris, Pinot Noir and Chardonnay, which contribute to enriching the winery's range of wines. More than 80% of the grapes are harvested by hand in steep, non-mechanisable vineyards. In the cellar, vinification takes place with the utmost care, using both stainless steel tanks and wooden barrels for ageing.
