  • Vinification After an initial cryo-maceration of the grapes and the pressing, the fermentation is started and thermocontrolled in stainless steel. At the end of the first fermentation, the wine is placed in an autoclave for the "presa di spuma". Cycle lasts at least 90 days.

    Passerina Brut
  • 100% Passerina, from the company's vineyards in Ascoli Piceno, sparkling and proposed in a very pleasant Brut version. Perfect as an aperitif, on the table it gives its best with delicate dishes, such as raw fish, or delicious dishes such as a rich mixed fry. Harvested by hand in boxes of about 20 kg, the Passerina grapes are picked at the best time for the production of the base sparkling wine. Then, after a brief phase of cryo-maceration of the grapes, we proceed with a soft pressing and a phase of fermentation in steel. Then, once the first fermentation is complete, the base wine is prepared for re-fermentation in autoclave, which continues for no less than 90 days. Luminous yellow with silver reflections, in the glass it has a dense and persistent perlage. The nose has notes of fresh flowers and juicy fruits. The same ones that end up in their mouths.

    It all began with two very young entrepreneurs, Angela and Ercole Velenosi. It was 1984. The company's headquarters is located in Ascoli Piceno, in the heart of the Marche region, about 20 kilometres from the Adriatic coast, at an altitude of about 200 metres above sea level. The company's estates are located in the hills, where clayey and fertile soils have always been considered ideal for the cultivation of vines. Four separate farms located in Ascoli Piceno, Castorano, Monsampolo del Tronto and Castel di Lama, with a vineyard in the area of Ancarano, in the province of Teramo, and one in the area of San Marcello, in the province of Ancona, in the Castelli di Jesi. Velenosi wines are often awarded by the most severe national and international critics and are distributed in more than 52 countries in the world. Today the total production is around 2 and a half million bottles per year. But, as the company says, the projects in the pipeline are not finished yet.
