    • Today we are in the beautiful hills of the Treviso area, a UNESCO heritage site, where the sun kisses the vineyards and the wind mitigates the summer heat. This is where Foss Marai's Valdobbiadene Prosecco Superiore DOCG Extra Dry Strada di Guia 109 was born. A name that is evocative of its origin. Strada di Guia 109, in fact, is the handkerchief of land, between Conegliano and Valdobbiadene, where the Glera grapes come from. The slopes, composed of layers of sandstone and marl, offer optimal drainage and soil rich in minerals. Essential elements for producing grapes of superior quality. The cool and ventilated climate, with significant temperature fluctuations, favours a slow and gradual ripening, preserving aromas and freshness. The grapes are harvested by hand at the perfect moment of ripeness. Alcoholic fermentation takes place in steel at a controlled temperature, to enhance the primary aromas of the grape variety. Then, according to the Charmat (or Martinotti) Method, the wine is re-fermented in autoclave for 25-30 days, acquiring its fine and persistent effervescence. A moderate residual sugar gives this Extra Dry a nice balance between freshness and smoothness. Straw yellow in colour with greenish reflections, the nose is rich and inviting, with notes of green apple, acacia flowers and citrus fruits that intertwine with hints of bread crust and yeast. In the mouth it reveals great vivacity, with a fine, persistent bubble that caresses the tongue. The crisp freshness balances perfectly with the softness of the fruit and the residual sugar, making for a satisfying and inviting sip. Best served with fish, shellfish and seafood dishes. Excellent as an aperitif, it makes every toast a special moment.
