Franciacorta DOCG Rosé Zero is a little gem of a wine that well represents the passion and dedication of the Santus winery in the production of high quality sparkling wines. Franciacorta DOCG, Santus' Rosé Zero is made from 100% Pinot Noir grapes, a noble grape variety known for its elegance and complexity. The decision to use only Pinot Noir gives the wine a solid structure and a rich aromatic range, with distinctive fruity and floral notes. After the manual harvest, the grapes are quickly taken to the winery to begin the transformation process. It starts with de-stemming, followed by carbonic maceration on the skins in a press. This phase, which lasts a few hours, allows for the delicate extraction of aromatic compounds and the characteristic colour of rosé. The must then ferments and matures for six months in stainless steel tanks, preserving the freshness and aromatic integrity of the wine. Finally, the wine undergoes a secondary fermentation in the bottle and is aged on the lees for a minimum of 40 months, developing complexity and finesse. Santus Franciacorta Rosé Zero has a very delicate pale pink colour, almost onion skin. The foam is fine and elegant. On the nose, it immediately reveals an intense aroma of wild strawberries and rose hips, a prelude to an enchanting fruity and floral bouquet. Hints of raspberry, peach peel and blood orange intertwine harmoniously, creating a refined and elegant olfactory profile. In the mouth it has a sharp and lively attack, with a crisp and persistent flavour, where the fruity notes perceived on the nose return strongly, accompanied by a slight minerality that gives balance and harmony. An extremely versatile wine in its pairings, it goes well with raw fish and shellfish in general, enhancing the delicacy of the marine flavours. Its structure and complexity also make it ideal with more elaborate fish-based dishes, such as soups and recipes with sea urchins.
