  • Take a generous portion of Glera grapes. Add a little red-wine Pinot Noir. Mix it all together and start a long sparkling phase in autoclave. This is the recipe for the surprising Prosecco DOC Rosé, the most awaited novelty of 2021. The one proposed here by Cantina del Soligo is a vintage version, that is, produced only with grapes harvested during the 2020 harvest, with 10% of Pinot Noir used in the blend. In accordance with regulations, the slow fermentation in autoclave lasts for at least 60 days, giving the wine time to reach the right stability of colour and aromatic complexity. Soft pink, bright and elegant, a multitude of bubbles create its elegant and long-lasting perlage. Fruity notes emerge on the nose, with a touch of berries and tropical fruit, then floral, with hints of roses and violets. In the mouth it is fresh, soft, with an intense and persistent floral aftertaste and hints of wild strawberry and violet. Surprising as an aperitif, excellent when paired with fish, seafood or delicate meat and cheese dishes.
