  • Vinification WINE-MAKING: The whole white grapes are put into the pneumatic press and the must obtained from their soft pressing, after a first decanting, is put into the temperature-controlled tanks where it remains until it is used for the production of the sparkling wine; the red grapes after pressing are sent to the vinificators to undergo a light maceration at a temperature of 22-23°C in order to have an extraction of colour and few tannic substances while exalting the perfumes. PRODUCTION OF THE SPARKLING WINE: The white must and a minimum percentage of red wine are mixed and added with yeasts selected by La Gioiosa, the cuvée thus obtained is placed in the containers where fermentation takes place at a controlled temperature of 15-16°C. In this way all the scents of the harvest are exalted. Once the desired alcohol content and sugar content has been reached, refrigeration stops fermentation and after a period of at least two months on the lees, the sparkling wine is ready for bottling.

The nose is pleasantly fruity and floral, with delicate hints of unripe golden apples and small white flowers. On the palate, however, it is pleasantly dry, thanks to the low dosage, and at the same time fresh and savoury with a pleasant aftertaste that recalls the fruit notes perceived earlier. An aperitif wine par excellence, Rosea is also suitable for accompanying fish dishes alla livornese, with tomatoes and olives.
