    • Sensations Light golden hues. The nose smells of fresh apple, white peach and citrus flowers. Refined and complex hints of lemon, stone fruit and raspberry on the palate. The pleasant acidity contributes tremendously to the wine's refined finish.
    • Vinification The grapes are hand-picked and the whole bunches are gently pressed in pneumatic presses to collect the purest juices (cuvée). After two days, the must is placed to ferment in steel tanks at about 15-17°C with selected yeasts. To add complexity to the wine, some of the Chardonnay is fermented in French oak barrels. Second fermentation in the bottle follows.

      "Kaapse Vonkel" Méthod Cap Classique Brut
    • The South African Classical Method was created precisely because of Simonig's commitment and dedication. And this, years later, is still a good example of that. Kaapse Vonkel, Cap Classique, as sparkling wines made in South Africa are called, this Brut comes from the Coastal Region, and to be precise from the Stellenbosch area, one of the most famous wine regions on the African continent. A certified organic wine that is also suitable for vegan consumers, this Metodo Classico from Simonsig comes from a blend of 51% Chardonnay, 47% Pinot Noir and the remaining 2% Pinot Meunier. Grapes are hand-picked and whole bunches are gently pressed in pneumatic presses. This allows only the best part of the juice, the cuvée, to be collected. Then, after about two days, the clarified must is fermented in temperature-controlled steel tanks by selected yeasts. To add complexity to the base wine, some of the Chardonnay is fermented in French oak barrels. After bottling, the lying bottles are placed in the cellar for second fermentation and subsequent aging. In the glass, it has a beautiful straw yellow color with golden glints. The perlage is fine and persistent and conveys very fresh scents of apple, white peach and citrus blossom on the nose. On the palate, refined and complex hints of lemon, stone fruit and raspberry. Finally, the pleasant acidity contributes tremendously to the wine's refined finish. It is the bottle to uncork to surprise experienced friends. A great bubbly, from a decidedly unusual territory. Excellent with raw fish or with tasty dishes such as a fried fish.
