A certified organic wine that is also suitable for vegan consumers, this Metodo Classico from Simonsig comes from a blend of 51% Chardonnay, 47% Pinot Noir and the remaining 2% Pinot Meunier. Grapes are hand-picked and whole bunches are gently pressed in pneumatic presses. This allows only the best part of the juice, the cuvée, to be collected. Then, after about two days, the clarified must is fermented in temperature-controlled steel tanks by selected yeasts. To add complexity to the base wine, some of the Chardonnay is fermented in French oak barrels. After bottling, the lying bottles are placed in the cellar for second fermentation and subsequent aging. In the glass, it has a beautiful straw yellow color with golden glints. The perlage is fine and persistent and conveys very fresh scents of apple, white peach and citrus blossom on the nose.
