Its name is Kaapse Vonkel. It is a Cap Classique, which is a classic method produced in South Africa. It is presented as Brut, so it is dry, but not excessive. And it is a Rosé. It is produced by Simonsig, one of South Africa's best-known wineries that, in addition to making good still wines, was the first to introduce classic method sparkling wine production on the African continent. And it did so by drawing inspiration from the great masters of Champagne. The one offered here is Organic and vegan, made from a blend of red grapes, with Pinot Noir at 75%, Pinotage at 23% and Pinot Meunier at 2%. The grapes are harvested by hand, and the whole bunches are gently pressed in pneumatic presses that allow the harvesting of clear and pure musts, the so-called cuvée. Then, after two days, the must is placed to ferment in temperature-controlled steel tanks with specially selected yeasts. This is followed by meticulous tasting of the different cuvées, which are then expertly blended to produce a wine that is refined and fruity to the right degree. Second fermentation in the bottle creates effervescence. Light salmon color, this wine is characterized by a fine and persistent bubble. Captivating raspberry and blueberry aromas on the nose, enhanced by subtle floral notes. The palate, however, reveals a delicious strawberry sorbet. Then red berries and a delicate hint of cookie. An extremely enjoyable rosé, this Simonsig-branded Cap Classique reveals a pleasantly gastronomic soul. Excellent with fish first and second courses, vegetarian preparations and, if desired, even as an unusual end to a meal, accompanied with a bowl of fresh fruit.
